CULINARY EXPERIENCE

Amaria

Under the direction of Chef Eduardo Zaragoza, Amaría offers two six-course tasting menus, designed as culinary journeys where history, art, and romance come together in every detail.

TASTING MENU

Frida Kahlo

Inspired by the story of Frida Kahlo and Diego Rivera, this menu pays tribute to one of the most iconic couples in Mexican art.

Each course has been created with ingredients representative of the era and named in honor of Frida Kahlo’s life and work.

The meal concludes with a dessert inspired by Diego Rivera’s favorite—the one that, as the story goes, Frida used to make especially for him.

An experience that celebrates love, memory, and identity.

The Abduction of Europa

Inspired by the fresco in the mansion’s reception hall, this menu takes the myth of the abduction of Europa as its starting point: the story in which Zeus, transformed into a white bull, wins over Princess Europa and carries her across the sea to a destination that would change history.

A symbol of desire, destiny, and romance, this narrative is translated into a menu that evokes classic elegance, intensity, and subtlety in every course.

Chef Eduardo Zaragoza

After earning a bachelor’s degree in Gastronomy from the Autonomous University of the State of Hidalgo, Eduardo Zaragoza built his professional profile through a combination of technical discipline and experience in high-end kitchens. During his academic career, he completed internships at Merotoro and Comedor Jacinta, where he was exposed to culinary approaches that would shape his vision and high standards.

After completing his studies, he joined Merotoro’s cold dishes and desserts department, further honing his expertise in pastry making. He later continued his professional development at Laja, in the Guadalupe Valley, where he worked for two years as a pastry chef, cook, and baker, expanding his comprehensive mastery of the kitchen.

He later joined the Equinoccio project and, finally, at Olivea, he took on the role of pastry chef and executive chef, leading the team and shaping the restaurant’s culinary concept. His career reflects constant evolution, technical precision, and a culinary identity that is continually evolving.
